Our Hot Chilli flavour is made using our own secret marinade and topped with a sprinkling of chilli. The result is you get the instant 'heat' from the surface chilli and a longer 'heat' (that builds up) from the chilli within the marinade.then air dried to seal in the freshness.First, we slice our meat from whole topsides which weigh approx 10-15 kgs. Next we marinade and when ready, we air dry them and chop into strips ready for you to eat.
